Proof: 90 (45% ABV)
Mash bill: 100% local corn
Barrels: small (5/6/10 gallon) used bourbon barrels
Age: 1.5y (most recent bottling, batch 6)
Tasting notes: Strong vanilla, toasty oak, caramel, candy, corn sweetness
Story: This is our house whiskey, named after our converted fire station. It's made from grain to glass using 100% local corn from Kraft Farms. We double distill it, preserving the rich character and flavor of the corn for a distinctive, local flavor and pleasant mouthfeel. Small barrel aging in the Texas heat provides serious flavor and smoothness. Refilling used bourbon barrels in the fashion of Scotch and Irish whiskey gives it more of a toasty profile than big char bourbons.

Story: Think Jubilee, like cherries jubilee. We always wanted to do a cherry wood finish even before we opened, and started with our very first batch. This spirit is distilled and aged in the same fashion as our Firehouse whiskey. From there, we dump the barrels and let the spirit soak in flavor from our house toasted cherry wood chunks. The finish gives it the sweet, fruity, aromatic, and slightly tangy cherry notes.

This spirit is distilled and aged in the same fashion as our Firehouse whiskey. From there, we dump the barrels and let the spirit soak in flavor from toasted amburana wood spirals. This finish gives Samba the tropical and cinnamon notes that make it both unique and delicious

Infusion: Hibiscus and other natural botanicals, sweetened with stevia
Red Stinger Hibiscus Whiskey offers a unique blend of tart, fruity, deep and sweet flavors. Infusion with natural botanicals makes it uniquely authentic and beautiful in color. It's lightly sweetened with stevia, which means there are no added sugars. Red Stinger is a cocktail machine. It's perfect for pairing with citrus, mint, heat or spice, but can also be enjoyed neat, on the rocks, or with a splash of soda.
Story: We always said that our tasting room was going to be our test kitchen. Two weeks in, we decided to go for it. We went bold with our flavors and put it out on social media so that there were no take-backs. That's how Red Stinger was born. It was so popular with customers that we had to keep it on the menu, and a year and a half later, here it is for you to enjoy.

Tasting notes: Strong corn and subtle candy
Story: Don’t let the name fool you, it’s not meant to hurt you. Think of this as comparable to a nice light rum or silver tequila, but corn-forward. We originally bottled this as a clear base spirit for cocktails, but we also can’t stop sipping on it. Double distillation with an emphasis on preserving as much corn character and flavor as possible provides distinctive local flavor and pleasant mouth feel. It works well in cocktails as an alternative to rum, vodka, gin, or tequila. Its ability to take on flavors also makes it great for infusions.

There's plenty to look forward to in the Johnny Pickles barrel room:
Loose Cannon Straight Bourbon: This one's aging in fantastic new toasted and charred barrels from Kelvin Cooperage. It's got such great flavor already that we're almost too exited about it to be patient. We're anticipating a release sometime in 2025.
