Spirits

All of our spirits are made from grain-to-glass from local corn and then aged and bottled on site. They are available for purchase from our tasting room.

Firehouse

Named after our location in the old North Austin Street Firehouse. (Everybody asks: we don't have a pole.) Made from grain-to-glass with a mash bill of 100% locally grown yellow corn. Double distilled with a focus on preserving the character and flavor of the corn and providing a pleasant mouth feel. Aging in small used bourbon, rye and wheat whiskey barrels in the Texas heat gives it strong notes of caramel, vanilla, and toasty wood, with subtle candy.

Moonshine

Johnny Pickles Moomshine is the spirit for our Firehouse Whiskey, but unaged. Made from grain-to-glass with a mash bill of 100% locally grown yellow corn. Double distilled with a focus on preserving the character and flavor of the corn and providing a pleasant mouth feel. It has plenty of flavor, and works well in cocktails as an alternative to rum, vodka, gin, or tequila.

Jubilee

We had to do something special with batch one of our grain to glass whiskey. After barrel aging it, we split it and finished this half on house toasted cherry wood. The sweet, fruity, aromatic and slightly tangy notes are a great compliment to our whiskey made from 100% locally grown corn. 

Breakfast

After barrel aging batch one of our grain to glass whiskey, we split it and finished this half on house toasted maple wood. While you might not pour it on your pancakes (we wouldn't judge), it has that beloved, classic, maple depth and complexity.
