Spirits
All of our spirits are made from grain-to-glass from local corn and then aged and bottled on site. They are available for purchase from our tasting room.
Firehouse
Named after our location in the old North Austin Street Firehouse. (Everybody asks: we don't have a pole.) Made from grain-to-glass with a mash bill of 100% locally grown yellow corn. Double distilled with a focus on preserving the character and flavor of the corn and providing a pleasant mouth feel. Aging in small used bourbon, rye and wheat whiskey barrels in the Texas heat gives it strong notes of caramel, vanilla, and toasty wood, with subtle candy.
Moonshine
Johnny Pickles Moonshine is the spirit for our Firehouse Whiskey, but unaged. Made from grain-to-glass with a mash bill of 100% locally grown yellow corn. Double distilled with a focus on preserving the character and flavor of the corn and providing a pleasant mouth feel. It has plenty of flavor, and works well in cocktails as an alternative to rum, vodka, gin, or tequila.
Jubilee
We had to do something special with batch one of our grain to glass whiskey. After barrel aging it, we split it and finished this half on house toasted cherry wood. The sweet, fruity, aromatic and slightly tangy notes are a great compliment to our whiskey made from 100% locally grown corn.
Breakfast
After barrel aging batch one of our grain to glass whiskey, we split it and finished this half on house toasted maple wood. While you might not pour it on your pancakes (we wouldn't judge), it has that beloved, classic, maple depth and complexity.
Samba
Samba is aged in small used bourbon barrels out in the Texas heat for a bold infusion of toasty vanilla and caramel. It is then finished on toasted amburana wood to give it strong characteristic notes of cinnamon, toasted coconut, tropical fruit, and spice. Each bottle is produced using locally sourced corn, resulting in a smooth, flavorful, harmonious grain-to-glass whiskey.

Additional Finishes: We had so much fun with Jubilee and Breakfast that we're going to do two more! Stay tuned for more updates.
Bourbon: This one's aging in fantastic new toasted and charred barrels from Kelvin Cooperage. It's got such great flavor already that we're almost too exited about it to be patient. We're anticipating a Fall or Summer 2024 release.
Infused Moonshine: Part of our roots is in infusions, so we have a whole list of ideas we're going to try. We'll be prototyping and getting opinions in our tasting room as we go, so come on by and be part of the experiment. We're busy formulating the first one, and will let everyone know when we're ready!
